C. Hollandaise Sauce
Brown sauce is sometimes called Espagnole made from a roux-based sauce made with margarine or butter, flavor, brown stock and sometimes vinegar. A condiment served with food in the United Kingdom and Ireland.
Butter sauce is made from butter, water or broth, and seasonings, thickened with flour, and also used as a basis for the making of other sauces such as caper sauce or shrimp sauce by the addition of special ingredients.
Tomato sauce is made from stock of ham or pork and tomato products seasoned with spices and herbs.
Hollandaise Sauce or Dutch is a sauce made from butter, egg yolks, lemon juice and cayenne peppers.
